Peach Pistachio Pancakes- GLUTEN-FREE and VEGAN

IMG_7360 These fuzzy fruits are in season and all over the place! Super sweet and delicious! I've been adding peaches to just about any recipe I can lately, and let me tell you, you can't go wrong.

These peach pancakes are super fluffy, gluten-free, and vegan. I made a pistachio milk earlier this week and added it to this pancake mixture which turned out to be a great combination! Not only will you save tons of money making your own nut milk, but you will also be able to control what goes in to it. There are so many chemical additives in store-brand nut milks, that its not as healthy as you may think.

Peaches have super healing properties! They are beneficial to your skin and eye health. Peaches are filled with antioxidants, and vitamins A and C. Peaches also aid in weight loss, they are full of fiber and keep you feeling fuller longer, and only contain 35-50 calories in one peach! They are also known to detoxify your body. Peaches are a diuretic, and help flush out any toxins in your body. Peaches are also known to reduce stress and anxiety.

Pistachios are filled with protein, fiber, and potassium. One serving of pistachios has the same amount of potassium as half a large banana! These nuts also contain more than 10% of the dietary value of fiber, minerals and vitamins like B6, thiamin, phosphorus, and copper. A serving is one ounce, which is 49 pistachios! So eat away at these nuts, you get to eat more nuts per serving than any other nut!

The sweetness of the fresh peaches, creaminess of the pistachio milk, and crunch from the whole pistachios will have you thinking you're eating dessert for breakfast. These are the fluffiest most satisfying pancakes out there! Be creative, you can substitute different fruits, and nut milks depending on whats in season!

Yields 4 large pancakes

Ingredients:

1. Mix together in bowl the gluten free pancake mix, pistachio milk, pistachio nuts, coconut oil,  and cinnamon.

2. Thinly slice peaches. Add to mix or add to pancake batter after pouring onto skillet.

3. Heat about 1 TBSP more of coconut oil in pan. Pour a little more than 1/4 cup of pancake batter, and place about 4 thin slices of peach into pancake. Cook on one side for about 4 minutes, until pancake batter begins to bubble in the center, and is brown.

4. Flip pancake over and cook on other side until pancake is cooke through and golden brown. About another 3-4 minutes.

5. Repeat steps 3-4 until all your pancakes are made. Top pancakes off with fresh peaches and maple syrup, and enjoy!

Nut Milk Recipe

You may be thinking to yourself, why didn't I think of this sooner? Thats what I thought when I made my first batch of nut milk. Its super easy and simple to make, and you really don't need that many ingredients. So why do we keep buying store-brand nut milks?! Because its right there when you shop for your groceries? Okay I get it. Its "easier." But let me break it down for you. How much are you spending on nut milk? My boyfriend and I were going through 1-2 half gallons of nut milk a week, and in New York City it costs $5 per half gallon. Equalling $5-$10 of nut milk a week. A half gallon equals 8 cups.

Heres an example of what is costs to make almond milk. 1 pound of raw almonds from trader Joe's cost me $6.99. 1 pound of almonds yields 4 cups. With 1 cup of raw almonds I can make 4 cups of almond milk, so with 4 cups of almonds I can make 16 cups of almond milk! Thats twice the amount of almond milk that I would get for a half a gallon of store brand almond milk that used to cost me $5. Lets compareStore brand almond milk filled with harmful chemicals and additives cost me $5 for 8 cups. My homemade, pure, all-natural almond milk costs me $3.50 for 8 cups. WIN! Yes, different nuts vary in price, but I'm sure you will make almond milk the most, because it's super versatile. However, I tried experimented with making pistachio milk! I know right?! Sounds amazing, and it was! Super creamy, with a hint of pistachio flavor, and it came out a beautiful creamy pastel green. Many almond milks contain a harmful ingredient that you should look out for called carrageenan. Carrageenan, which has no nutritional value, has been used as a thickener and emulsifier to improve the texture of ice cream, yogurt, cottage cheese, soy milk and other processed foods.  

Research has shown that exposure to carrageenan causes inflammation and that when we consume processed foods containing it, we ingest enough to cause inflammation in our bodies. All forms of carrageenan are capable of causing inflammation. Chronic inflammation is a root cause of many serious diseases including heart disease, Alzheimer's, and Parkinson's diseases, and cancer. When laboratory mice were exposed to low concentrations of carrageenan for 18 days, they developed a "profound" glucose intolerance and impaired insulin action, both of which can lead to diabetes.

This is extremely scary to learn, when carrageenan is being added to so many processed products on the market and it being consumed unknowingly. We think almond milk, a great milk alternative, yes. But companies still find a way to sneak in harmful ingredients into our products and body's. Would you consume something that could potentially cancer or diabetes? I didn't think so. If you do have to buy store brand almond milk, I recommend buying Silk's Unsweetened Original Almond Milk, because this does not contain carrageenan. But if you have the time, make it yourself! It tastes so much better, is better for you, and cheaper! Really can't go wrong!

Yields 4 cups

Ingredients: 

  • 1 cup nuts (almonds, pistachios, walnuts,  or hazelnuts)
  • 4 cups boiling water
  • 1/2 tsp salt
  • 1 tbsp maple syrup or 1 large date  (optional)
  • 1 tsp vanilla extract (optional)

1. Soak 1 cup of nuts for at least 12 hours in water.

2. Drain water that the nuts were soaked in.

3. Boil 4 cups of water.

4. Add the soaked nuts and 4 cups of boiling water to blender with salt, and sweetener (maple syrup or date), and vanilla extract if you like.

5. Blend until nuts have been liquified.

6. Strain mixture in a bowl with a fine strainer or cheese cloth to separate milk from the nut meat.

7. Store nut milk in mason jar, and use within 3-4 days.  

Peach Pie Oatmeal

Peaches not only are naturally sweet and delicious, but are also great fro skin health and eye health. Peaches are filled with vitamins A and C make which help regenerate skin tissue.

Peaches also cleanse toxins from the body. They have a diuretic effect which helps cleanse your kidneys and bladder. They are also a healthy stress reliever! Peaches help to reduce anxiety and are even referred to as the ‘Fruit of Calmness’ in Hungary.

Peaches also help you lose weight! They are rich in fiber which keeps you feeling full longer. One peach contains about 35-50 calories. They even help to fight obesity-related diabetes and cardiovascular disease. Peaches are rich in phytochemicals called phenols that act as antioxidants.

All these health benefits from a delicious fruit!? I'll take it!

This recipe is perfect for any peach lovers out there. The gooey peaches mixed with maple syrup and oatmeal makes this recipe taste like peach pie for breakfast! I highly recommend you try it for yourself!

Serves 2 people

Ingredients: 

  • 4 small or 2 large peaches
  • 1 mashed banana (optional)
  • 1 TBSP maple syrup
  • 1 cup almond milk
  • 1 cup water
  • 1 tsp cinnamon

Toppings:

  • Shredded coconut
  • Raw Almonds
  • Freshly sliced peach

1. Over medium heat, simmer sliced peaches in maple syrup and cinnamon. Add in mashed banana. Cook until peaches have softened.

2. Add in almond milk, water, and oatmeal. Cook on low heat and stir frequently until oatmeal is gooey and fully cooked. About 10-15 minutes.

3. Top off with shredded coconut, almonds, and fresh peach! Enjoy!

 

Beauty Simplified: My Favorite All-Natural Beauty Products

Beauty Products Did you know that your skin is the largest organ in your body? All the more reason to take care of it! What you put on your skin topically eventually soaked up by your pores and makes its way inside your body, which is why I use all-natural products with no sulfates, aluminum, or harmful ingredients.

It's always important to maintain a balance of natural oils on your skin. Don't over wash your face, or put too many products on your face if you don't need to. If you notice you have dead skin, exfoliate, and if you are dealing with breakouts use tea tree oil and lavender oil on your skin. Don't overdo it, or else you'll make your skin angry. These are products I use often and love, and they are gentle and don't take away from my skins pH.

My beauty regimen looks like this...I use a gentle cleanser in the morning, Origins Gentle Cleansing Oil. Then spritz KORA Organic's Citrus Energizing Mist to revive and tone my skin in  the morning. I'll wash my face with Origins Modern Friction twice a week to exfoliate dead skin from the surface. At night, I'll wash my face with my Clarisonic brush and Naturopathica Aloe Cleansing Gel. The Clarisonic is more effective then washing your face with your hands, because it gently washes deep in your pores to get rid of dirt deep down in there, instead just washing dirt off the surface with your hands. It also helps to exfoliate and get rid of dead skin on the surface. My skin has become smoother and I have less breakouts now. It's definitely worth the investment. Especially if you have acne-prone skin.

At night, after washing my face, I'll spritz the Eminence Stone Crop Hydrating Mist and then use Eco. Pimple Clear all over my face and Kora Organics Rosehip oil. The Pimple Clear is a mixture of tea tree oil, which dries out and kills pimple causing bacteria, and lavender oil, which also kills bacteria and heals your skin. Tea tree oil can be extremely harsh and drying, but this mixture is more gentle and gets rid of pimples overnight. It's my favorite product! The Rosehip Oil is a natural and nourishing moisturizer. I only use one pump of this because I don't want to clog my pores. I'll use  a few pumps of the Eco. C serum in the morning or at night depending on how dry my skin is.

The Lush Bubblegum Lip Scrub is a natural sugar scrub mixture that gets rid of old dead skin to reveal plump pink lips!

Alba's very Emollient Body Lotion is my favorite! Its vegan and super moisturizing. It soaks right into your skin leaving it feeling creamy and silky. It's not greasy or oily at all. People always compliment me on how soft my skin is, and it's really because of this moisturizer! I will never use any other!

Eco. Erase Body Oil, is perfect to use right after your shower. It helps to heal scars, stretch marks, blemishes, and leaves your skin feeling super soft and supple.

I love Ojon's Rare Blend Hair Oil! I have curly thick hair thats prone to frizz especially in the summer and it helps tame it! I use about a quarter size amount and apply it to my wet hair after showering. I'll use a tiny bit more after blowdrying my had as well, to add shine and tame my baby hairs.

For eye makeup remover, I use natural coconut oil. Why buy expensive makeup removers when you have a natural product at home you can use? I buy large tubs of coconut oil and theres so many uses for it. You can use it to condition your hair, oil pulling, eye makeup remover, body lotion, and of course to cook with. Coconut oil is extremely handy and versatile!

Chocolate Chia Seed Pudding Nice-Cream Sundae

1622246_10154462444155085_7125828081516435754_n In the summer I take advantage of as much seasonal produce as I can. Since strawberries and cherries are in season I figured why not create a nice-cream sundae jar of amazingness?!

Theres many ways you can take advantage of buying seasonal produce. Farmers markets are becoming more popular then ever, which is a great thing! However, those that can't make it to the farmers market on time may want to opt for something called a CSA. This is when you purchase a share in a farmers crop for a certain period of time. This allows you to receive a box of fresh fruits, vegetables, and sometimes even eggs. You have a set pickup point close to your home where you pick up your bounty and it should last you while! Here's more information about CSA's available in New York City. It not only provides you with extremely fresh local food but also switches up what you would normally buy every week, so you are forced to be more creative! Which I love!

There are also other organizations in New York City that deliver organic produce straight to your door. This organization called Go Organic NYC emphasizes on organic produce. If it's available and in season locally then thats where it comes from but if you order tropical fruit like bananas and pineapple they are still organic but haven't been grown locally of course.

Not only will buying locally support local farmers and your community but it will also allow you to eat a more plant-based diet. Buying organic is important as well, because the more we learn about how harmful pesticides are the more we realize we shouldn't be consuming them whatsoever. And lets face it, fresh fruits and vegetables that haven't been sprayed with pesticides just taste better! We shouldn't withhold flavor from ourselves!

Whenever I roam through farmers markets upstate I get inspired by all the colorful imperfectly shaped produce and the fresh jams, baked goods, and breads that all the vendors bring! Food should feed your creative juices as well as your body. Food is nourishment, but when we make that nourishment tasty and delicious, that's what keeps us coming back for more.

I see a trend in organic local food spreading, and the more we develop new tasty recipes and show people how delicious real food is, the more people won't be able to deny that fact, that fruits and vegetables taste good! I don't blame people who have eaten bad quality or poorly prepared vegetables and think that they all taste that way. But when they discover that cauliflower can be roasted, or made into a pizza crust and see how delicious it tastes, thats success!

Buy fresh bounty, spread the bounty, and get creative with your dishes! Maybe incorporate a different cuisine once a week, like Indian night, or Thai night, and from there discover different spices and flavors that you may not normally cook with.

Yields 1 Serving

Ingredients:

Chocolate Chia Seed Pudding:

  • 2 TBSP chia seeds
  • ½ cup unsweetened almond milk
  • 1 to 2 TBSP maple syrup
  • 1 TBSP cocao powder

Banana Date Nice-Cream Layer:

  • 1 frozen banana
  • 2 dates (chopped)
  • 2 TBSP unsweetened almond milk

Black cherry Banana Nice-Cream Layer:

  • 1 frozen banana
  • 4 frozen cherries
  • 2 TBSP unsweetened almond milk

Layers in between:

  • 3 fresh or frozen cherries
  • 4 freshly sliced strawberries

Assembly:

1. Mix all chia seed pudding ingredients together well. Make chia seed pudding night before or allow mixture to sit for at least 3 hours.

2. Place chia seed pudding in bottom of jar and a layer of sliced frozen or fresh cherries on top.

3. Blend banana date nice-cream ingredients together and place on top of cherry layer.

4. Add in freshly sliced strawberries.

5. Blend black cherry banana nice-cream ingredients together. Add on top.

6. Top sundae off with dates, shredded coconut, and almonds. Enjoy this delicious masterpiece!

 

8 Simple Ways to Cure Acne Naturally

I’ve suffered from breakouts since I was a teenager. Its hard to have clear skin when you’re not the one in control of your hormones. Imbalanced hormones, especially when that time of the month comes around, increases breakouts. Everyone knows not to touch or irritate pimples, but its so hard not to! Believe me, whenever I don’t give into that instinct to pop a pimple, it goes away and I’m not left with red marks all over my face. Your skin is the largest organ of your body. It’s connected to every organ, and has a story to tell. If you suffer from acne, it may be hormonal, poor digestion, or liver function. If you have pimples all over your forehead for example, that means your digestive system isn’t functioning properly. You also might be allergic or intolerant to certain foods. Two common foods that cause breakouts are gluten and dairy. If you think that foods may be causing you to break out its worth it to eliminate those foods from your diet for a week and then slowly incorporate them back to see if you have any side effects or breakouts.

Heres some advice on how to heal acne naturally:

1. Drink Plenty of Water- Water helps to eliminate toxins in the body that can cause breakouts. It detoxifies and hydrates your skin. Add some fresh organic lemon juice to your water daily. Not only will you boost your metabolism, but your skin will begin to slowly clear up.

2. Change your Pillow Case Every Night- Oil and bacteria build up onto your sheets and pillow cases night after night. You want to allow your pores and skin to breathe. Changing your pillow case every night to a fresh one, will allow your skin to breathe on clean fabric. Also wearing your hair up and away from your face, so you don’t sleep on the oils produced by your hair will help as well.

3. Coconut oil- Coconut oil is a great natural moisturizer for your skin. It’s not made with harsh chemicals or fragrances, its pure. The best kind to use, is cold pressed organic coconut oil, because its the purest form. Everyone’s skin is different. Some more oily, dry, or combination, and it changes throughout the year. If your skin is feeling dry, I recommend using a tiny bit of coconut oil to moisturize. You don’t want to clog your pores though, so use coconut oil sparingly.

4. Rub Lemon Juice on Face to Reduce Acne Scars- The acid in the lemon juice will sting your skin a bit, but it will also lighten any scars you have on your face. This is the best trick, and it really does work! I used to touch my skin a lot and the scars weren’t pretty to look at. Doing this once to twice a week and leaving the lemon juice on your face for 5-7 minutes will really help lighten and brighten your skin to an even skin tone.

5. Sleep- Sleep is good for your entire body and it also helps speed up the healing process. When we sleep our body is restoring and re-energizing. Your face will look refreshed and your acne and acne scars will heal more quickly overnight. Have you ever noticed when you put pimple cream on your face at night and in the morning that pimple is gone? Yes, the pimple cream kills the pimple, but sleep allows your skin to work hard to kill that bacteria.

6. Wash your Face with Lukewarm and Cold Water- Never wash your face with hot water! Hot water not only irritates your skin, but it also opens your pores and allows for bacteria to spread. When you use lukewarm water this allows for your to wash your face, but not spread all the bacteria that threatens to create more pimples. Its best to splash your face with cold water at then end of washing your face, to close the pores and not allow for dirt and oil to get in. Another good trick is to fill your sink with freezing cold water and a bunch of ice cubes, and dunk your face in a few times. It not only will wake you up, but it also tightens  your skin and makes you look refreshed and awake!

7. Avocado- The omega-3 fatty acids that are found in avocado have amazing effects on your skin, when eaten or applied topically to your skin. Mash up a ripe avocado and spread it all over your face, leave on for 10 minutes and your face will feel so soft and smooth. It helps hydrate your skin. Breakouts don’t always happen because of dirt getting into your pores, it can also occur when your skin is dry and imbalanced. Avocado will help to balance your skin.

8. Tea Tree Oil- Tea tree oil is powerful. It drys out the pimple and kills the bacteria. You have to be patient, and not use too much, because it is extremely drying and you don’t want to irritate your skin. Its all natural and vegan-friendly so you avoid using products with chemicals or that have been tested on animals. It will not strip your skin of its natural oils and cause further damage.
