Acai Bowl

I love to make this bowl for breakfast. I'll mix in almond butter or peanut butter sometimes as well. Topping it off with granola is a must, because it adds a nice crunch. Get creative and add as many super foods or fruits as you'd like to on top! These are just a few of my favorites!

Makes 1 serving

1. Blend together all of the acai bowl ingredients in a high speed blender until liquified. You may need to slowly add more almond milk to make the acai mixture a thick creamy consistency.

2. Add on your toppings, and make your bowl look beautiful! Enjoy!

Superfood Super Delicious Hot Cocao

In the wintertime I always crave good hot chocolate. It’s not as easy to come across vegan hot chocolates but it also isn’t hard to make at home yourself! So I whipped up a delicious superfood version of my favorite wintertime drink. Using raw cocao powder instead of the conventional cocoa powder makes all the difference. No longer will your hot chocolate indulgence be a “guilty” pleasure! Cocao is the purest form of chocolate you can consume, and is way less processed than cocoa powder, meaning you receive more nutrients, and antioxidants. It is also known to be the highest source of magnesium of all foods. Cacao powder contains more fiber and calories than cocoa powder since more of the nutrients from the whole bean are still intact. Cacao is an excellent source of monounsaturated fats, cholesterol-free saturated fats, vitamins, minerals, fiber, natural carbohydrates, and protein which make is a powerful superfood ingredient!

I also used organic coconut sugar and maple syrup instead of processed white sugar in this recipe. This way the hot chocolate is sweet, but with all natural sweeteners, and when I say all natural, I literally mean ALL NATURAL! No gimmicks or false advertising here. I want to avoid any harmful sweeteners at all costs. So coconut sugar and real maple syrup (not the Aunt Jemima stuff) are healthy and naturally sweet! Yay!

I even added shredded coconut on the top of my hot cocao to finish it off, because i’m not a big marshmallow fan, and i figured why not!? It came out delicious and provided a nice texture.

So keep this recipe on hand for cozy warm nights or days when you’re snowed in, or just whenever you crave a hot chocolate. You won’t have to cringe anymore at the thought, because enow you have a healthy version to keep in mind! Nourishing, delicious, and tasty, I hope you enjoy!

Superfood Pumpkin Pancakes

What's one thing you crave in the mornings? This morning I found myself craving pancakes. I have so many pumpkin ingredients on hand, I figured why not make some pumpkin pancakes?! This thought didn't let me down. Bob's Red Mill gluten-free pancake mix is seriously the best, it always makes my pancakes fluffy and stay moist, which is a huge accomplishment for a gluten-free product. Mixed together with the pumpkin puree, spices, and nut and coconut milk, created pancake perfection.

I'm also super excited to announce that I will be co-hosting a yoga, meditation, and exploration retreat called Anzan on Lake Atitlan, Guatemala in April 2015. It will be a luxurious experience, where days will begin with freshly made organic juices, yoga and meditation overlooking the lake. The days will be filled with hikes, workshops, spa treatments and more. It will take place in a one-of-a-kind modern home right on the lake. Large open windows, a home that is one with nature, and quiet and peaceful. At night the sky will mesmerize you, the stars sparkle in the reflection of the lake. You will be able to enjoy this view while eating  fresh organic meals made daily that support your vitality and nutrition.

I've visited Lake Atitlan twice so far and every time I go, I can't wait to return. The lake is a spectacular and spiritual place, that will recenter and reconnect you to your roots and the roots of the Earth. Once you visit you will understand the tranquility and peacefulness I describe. I'll be posting more information soon and the link to Anzan's retreat website can be found on my website soon!

Until then, I'll be daydreaming about the lake and eating my fluffy pumpkin pancakes!
