Guacamole with Sweet Potato Chips


My obsession for avocado and guacamole is never ending. It's summer, which inevitably calls for guacamole and chips, but i didn't want just any old chips, I wanted to make my own! And I'm glad I did!

These freshly made sweet potato chips bring this recipe together. They were crunchy, sweet, and the perfect pairing with my homemade spicy guacamole. It just blows my mind how we've all been consuming store brand chips all these years, and have forgotten how to make our own at home! They are so simple, and easy to make, and so much better for you! Nothing processed in this recipe!

Mexican flavors and dishes are my favorite. I just love the spices, beans and rice, and of course avocado! This is perfect for lunch, or even as a snack! I think my guacamole will be accompanying me during the next FIFA World Cup game! Care to join? ;)



  • 2 ripe avocados
  • 3/4 tomato (diced)
  • 1/2 red onion (diced)
  • 1/2 small jalepeno (no seeds)
  • 1 1/2 lime juice
  • handful of cilantro (optional)
  • salt and pepper to taste

Sweet Potato Chips

  • 2 small sweet potatoes (thinly sliced)
  • coconut oil
  • salt and pepper to taste

1.Mash avocado and add in rest of the ingredients and mix together well. Add more salt and pepper or lime if it needs more.

2.Preheat oven to 450'F for sweet potato chips.

3. Thinly slice sweet potato and leave skin on.

4. Coat pan with coconut oil, and place sweet potato slices on top.

5. Drizzle more coconut oil on top of sweet potato and sprinkle salt and pepper over them.

6. Flip sweet potato chips over once crisp, and then cook till crisp on other side. Takes about 5-7 minutes per side.
